Crockpot Turkey Chili

BRRR, Baby It's Cold Outside!

In that case...Let's warm the place up and get a yummy dinner going that cooks itself ;)

CROCKPOT TURKEY CHILI



What Goods You'll Need:

2 lbs ground turkey
1/2 small onion chopped
1/2 green bell pepper
3 cloves garlic
ground cumin
chili powder
him salt
cayenne pepper
2 cans black or pinto beans drained
1 can diced tomatoes
fresh cilantro for garnish


How To:

1. Place all ingredients into the crockpot and stir up.
2. Place on low for about 4-5 hours.
3. Stir occasionally.
4. Serve warm, with a little cheese and greek yogurt for sour cream taste!
5. Top with cilantro garnish.

And added bonus, it's 21 Day Fix and Fix Extreme approved!!
Per serving: 1/2 Green, 1 Red and 1/2 a Yellow

{Real Food} Grilled Caprese Panini

Let me just tell you now that THIS will be a new staple in the Whiting Casa!

If you love Paninis, sandwiches or wraps...Try this!

This recipe came from the 100 Days of Real Foods book that I've currently been using at my Food Bible.

Prep AND Cook Time: 20 minutes and makes enough for 4 servings!

For that yummy Pesto Sauce goodness:

1/2 cup basil leaves
1/2 cup spinach leaves
1/3 cup grated parm cheese
1/4 cup pine nuts
1 garlic clove
2 tablespoons olive oil

Panini:

4 medium whole wheat pita pockets {trader joe's are YUM}
4 ounces mozz cheese cut into 8 slices
2 medium tomatoes and cut into 8 slices as well
olive oil {for panini grill}


HOW TO!

1. Preheat panini grill - a George Foreman OR pan can work too!

2. for pesto, combine the basil, spinach, parm cheese, nuts, garlic, and oil in a food processor or blender. I used my Ninja! Puree until the mix becomes thick like a paste.

3. To make sanwiches, cut the pita in half. Open the pocket and spread pesto in each, then load up each pita pocket with 1 cheese slice and 1 tomato sliver.

4. Grease top and bottom of grill, add the sandwiches and close lid. Cook them for about 3-4 minutes or until golden brown on top! These can be served warm or cold but WARM is my fave, especially in the cold months!

Lasagna Squash

Like italian? Then you will lurvvvv this one!

LASAGNA SQUASH BAKE:

For the meat sauce:
I used an organic tomato and basil marinara sauce

For the roasted squash:
brush the inside of your spaghetti squash with oil and season with salt and pepper, after cutting in half. Roast it skin side up on a baking sheet in the over on 400 degrees F until tender. For me it took about 35 minutes!

For the meat sauce:
Cook your ground turkey or ground beef on the stove, add onion and garlic for seasoning.

Then add in red pepper flakes (1/2 teaspoon)

Add 1/2 can of diced tomatoes and the marinara sauce and stir in. Reduce heat.

For lasagna stuffed spaghetti squash:
fluff the inside of squash with a fork, then take 1 cup of cottage cheese and 1 tablespoon of basil mixed and divide into each side of squash. Follow by adding the sauce/meat mixture to both, and top with a cup of mozzarella cheese!




Broil this in the oven until cheese has melted (about 2-3 minutes).

VOILA!
