Let me just tell you now that THIS will be a new staple in the Whiting Casa!
If you love Paninis, sandwiches or wraps...Try this!
This recipe came from the 100 Days of Real Foods book that I've currently been using at my Food Bible.
Prep AND Cook Time: 20 minutes and makes enough for 4 servings!
For that yummy Pesto Sauce goodness:
1/2 cup basil leaves
1/2 cup spinach leaves
1/3 cup grated parm cheese
1/4 cup pine nuts
1 garlic clove
2 tablespoons olive oil
Panini:
4 medium whole wheat pita pockets {trader joe's are YUM}
4 ounces mozz cheese cut into 8 slices
2 medium tomatoes and cut into 8 slices as well
olive oil {for panini grill}
HOW TO!
1. Preheat panini grill - a George Foreman OR pan can work too!
2. for pesto, combine the basil, spinach, parm cheese, nuts, garlic, and oil in a food processor or blender. I used my Ninja! Puree until the mix becomes thick like a paste.
3. To make sanwiches, cut the pita in half. Open the pocket and spread pesto in each, then load up each pita pocket with 1 cheese slice and 1 tomato sliver.
4. Grease top and bottom of grill, add the sandwiches and close lid. Cook them for about 3-4 minutes or until golden brown on top! These can be served warm or cold but WARM is my fave, especially in the cold months!
